(The calorie count for the recipe uses pork sausage rather than turkey. I couldn't get the analyzer to recognize turkey sausage for some reason.)

Recipe Ingredients for Western Harvest Bounty Soup

1 tbsp canola oil
1 medium onion, diced
4 cloves garlic, minced
8 cups water
1 1/2 cups black beans, cooked
1 large carrot, quartered and sliced
1 stalk celery, diced
1 cup corn kernels, frozen
1 medium bell pepper, chopped
20 ounces diced tomatoes, no salt added
1 medium zucchini, peeled, quartered, and diced
1 medium yellow squash, peeled, quartered, and diced
1 tbsp dried basil
1 tsp dried dill
14 ounces Turkey Sausage, browned

Recipe Directions for Western Harvest Bounty Soup

  1. Saute onion, garlic, and celery in oil over medium heat in large soup pot until translucent.

  2. Add remaining ingredients and bring to a slow boil.

  3. Cover and simmer over low heat for about an hour.
