This frittata is quick to make and delicious. Try not to go overboard on the cheese, or it pushes the calories WAY up.

Recipe Ingredients for Western Frittata

0.5 tbsp Olive Oil
2 large Egg, Whole
0.5 cup, chopped Onions
0.25 cup, chopped Peppers, Sweet, Green
0.25 cup, chopped Peppers, Sweet, Red
2 fl oz Original Almond Breeze Unsweetened
0.13 cup Shredded Medium Cheddar Cheese Shredded Medium Cheddar Cheese

Recipe Directions for Western Frittata

  1. Heat a small ovenproof skillet coated with cooking spray over medium heat. Add the oil. Cook the onion an dpepper until lightly browned, 5 to 7 minutes.

  2. Whisk together the eggs and milk. Add to the skillet. Stir to distrubute the onion and pepper. Cook for 1 minute without stirring. Remove the skillet from the heat.

  3. Sprinkle the egg mixture with the cheese. Broil until the cheese browns and the top of the frittata is firm, about 1 to 2 minutes.

  4. Slice into 4 wedges. Top each wedge with a dollop of salsa.
