Recipe Ingredients for Westby Oatmeal Bread

1 cup dry Old Fashioned Quaker Oats
1 tbsp Salt, Table
2 tbsp Butter
3 tsp Yeast
0.5 cup Sugars, Granulated
3.5 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
3.5 cup Whole Wheat Flour

Recipe Directions for Westby Oatmeal Bread

  1. Boil 2 c. water. Add oatmeal and cook until done. Stir in butter and salt. Let oatmeal mixture cool to room temperature.

  2. In a large bowl, stir together 1.5 c of very warm (not hot) water, 1 T yeast, and sugar. Let sit 15 min or until bubbly.

  3. Add oatmeal mixture to yeast. Stir in 5 c. flour (2.5 whole wheat, 2.5 white)

  4. Turn dough onto floured surface. Knead for 10 min. or until dough is smooth and elastic (not sticky), using remaining two cups of flour to keep dough from getting too sticky.

  5. Place dough into greased bowl. Cover, set in a warm place, and let rise until doubled (about 1 hr)

  6. Punch down, divide into 2 loaves.

  7. Place dough loaves into 2 bread pans. Let rise again.

  8. Bake 30 min at 350 degrees.
