From Moosewood's Simple Suppers, p. 69. Serve with Coconut Rice (p. 182). Red pepper flakes (1/2 tsp) omitted.

Recipe Ingredients for West Indian Red Beans

1 1/2 c diced onions
1 tbsp vegetable oil
1/2 tsp red pepper flakes
1/4 tsp thyme
1/4 tsp allspice
28 oz diced tomatoes
28 oz kidney beans, drained

Recipe Directions for West Indian Red Beans

  1. Cook the coconut rice (p.182)

  2. While the rice is cooking, saute the onions in the oil for 3-4 minutes on medium heat. Add the red pepper flakes, sprinkle lightly with salt, cover, and cook, stirring occasionally, until the onions are soft, 5-8 min. Add the thyme, allspice, tomatoes, and beans, cover, and simmer 10-15 minutes, stirring occasionally.

  3. Top with cilantro (opt)
