Delicious and inexpensive tomato soup

Recipe Ingredients for West African Peanut Soup

3 cups tomatoes
3 ounces tomato paste
2 cups celery
1 onion
2 cups water
1 cup carrots
1/4 tsp pepper
1/4 tsp turmeric
1/2 tsp oregano
1 tbsp chicken bouillon
1/2 cup peanut butter

Recipe Directions for West African Peanut Soup

  1. chop tomatoes and semi-puree in food processor place with water, bouillon and spices in 5 quart pot

  2. chop celery & onion (precook 5 minutes)

  3. precook and puree carrots

  4. add all to tomato mixture and cook on low about 20 minutes.

  5. Add peanut butter and garnish with red pepper, zucchini or cilantro, simmer 10 minutes more.

  6. Serve
