Use Skippy extra crunchy peanut butter. Turkey can be substituted for chicken. Soup stock can be substituted for broth. Other veggies can be added (corn, green pepper), and more spices. Experiment and enjoy!

Recipe Ingredients for West African Peanut Soup

2 tbsp. olive oil
2 medium onions
2 large red bell peppers
4 cloves garlic
28 oz. crushed tomatoes
8 cups chicken broth
1/4 tsp. pepper
1/2 tsp. red pepper
6 cups chicken breast
2/3 cup peanut butter
1 cup brown rice

Recipe Directions for West African Peanut Soup

  1. Heat oil over medium high heat.

  2. Cook onions, chicken and peppers until lightly browned and tender, stirring in garlic when almost done.

  3. Stir in tomatoes, stock pepper and chilli powder.

  4. Reduce heat to low and simmer uncovered for 30+ minutes.

  5. Stir in rice, cover, and simmer another 15 minutes or until rice is tender.

  6. Stir in peanut butter until well blended.

  7. Serve with crusty bread.
