Mexican rice/vegetarian casserole

Recipe Ingredients for wendy's rice bake

5 cups Rice, Brown, Medium-grain, Cooked
1/2 onions (chopped)
1/2 cup red pepper (chopped)
1 tbsp olive oil
15 ozs garbanzo bean
2 cups shredded cheddar cheese
1 cup fat free ricotta cheese
1/2 cup fat free sour cream
12 tsps chili powder
2 cup salsa

Recipe Directions for wendy's rice bake

Cook rice in water til tender. Saute next 4 ingredients til tender. Add rice to beans. In a bowl, mix 1 Celsius shredded cheddar, ricotta, sour cream, chili powder and salsa. Spoon 1/2 of rice mixture in a greased 9x13" pan. Layer with cheese and salsa mixture. Repeat layers. Bake uncovered at 350 degrees for 25 minutes. Sprinkle with remaining cheese and bake 5 more minutes.
