Small round cakes which are cooked on a griddle. They are traditionally made my the Welsh in honor of St. David's Day on March 1. Each serving is two biscuits.

Recipe Ingredients for Welsh Tea Cakes II

4 cup White Flour, Unbleached
1 cup Sugars, Granulated
1/2 tsp Baking Powder
1/2 tbs Baking Soda
1/3 tsp Salt, Table
1 cup Butter
1 large egg Eggland's Best Egg
1 cup Currants, Zante, Dried
6 tsp Sugars, Granulated
1 tsp Nutmeg, Ground
1/2 cup Milk, Reduced Fat, Fluid, 2% Milkfat

Recipe Directions for Welsh Tea Cakes II

  1. Mix together the flour, sugar, baking powder, salt and nutmeg.

  2. Rub in butter (I used a pastry cutter)

  3. Add currants (or raisins)

  4. Mix in eggs and enough milk to make dough which can be rolled.

  5. Cut in 2" rounds with a biscuit cutter.

  6. Fry on griddle - I use a Teflon pan with Pam.

  7. Sprinkle with granulated sugar while still hot.
