A simplified version!! From the Good Housekeeping Illustrated Cookbook.

Recipe Ingredients for Welsh Rarebit

1/4 cup butter
1/2 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon dry mustard
1/8 teaspoon Cayenne pepper
2 cups 2% milk
1 tablespoon Worcestershire Sauce
2 cups reduced fat cheddar cheese, shredded
4 slices wheat bread, toasted and cut into pieces

Recipe Directions for Welsh Rarebit

  1. In 2-quart saucepan over low heat, melt butter. Stir in flour, salt, mustard, and cayenne until blended.

  2. Add milk and Worcestershire; cook, stirring, until thickened.

  3. Add cheddar cheese and cook until cheese is melted and well blended, stirring continuously.

  4. Pour hot cheese mixture over the warm toast and serve immediately.
