Thin scone like cake cooked on a griddle.

Recipe Ingredients for Welsh Cakes

16 oz all purpose flour
1 tsp baking powder
4 oz margarine
7 oz sugar
4 oz raisins
2 eggs
1/2 tsp allspice

Recipe Directions for Welsh Cakes

  1. Stir together flour and baking powder and spice.

  2. Rub in the fat.

  3. Add sugar and raisins.

  4. Beat the egg and add to mixture with a little milk to bind together and make a fairly stiff dough.

  5. Roll out on floured surface to about 1/4 inch and cut into 2" rounds.

  6. Cook on greased griddle or heavy frying pan for about 3 mins each side or until golden brown. (My griddle was to about 125-150 F)
