Welsh Cakes cooked on hob, from Joy of Baking site.

Recipe Ingredients for Welsh Cakes

2 cups flour
3/10 cup sugar
2 1/4 tsp baking powder
1/4 tsp salt
1/4 tsp cinnamon
1/4 tsp allspice
1/2 cup butter
1/2 cup raisins
1 egg
4 tbsp milk

Recipe Directions for Welsh Cakes

  1. Mix the flour, baking powder, spices, salt and sugar, lifting with fork to air.

  2. Combine mix with the butter or margarine until fine breadcrumb stage.

  3. Add in egg, and then as much milk as needed to obtain a firm dough.

  4. Roll or squash the dough out to 1-1.5 cm thickness and cut into rounds of 6-8 cm.

  5. Cook in in a lightly oiled skillet or heavy pan on a low heat, until well-browned on both sides and cooked in centre.
