this is enough for ten wheat or corn tortillas - if you use it differently, adjust portion size.

Recipe Ingredients for Well-fried beans

2 cups dried navy beans
1 tbsp vegetable oil
2 medium onions, minced
2 jalapeno peppers, minced
2 tsp ground cumin
1 tsp salt
1 tbsp fresh cilantro, chopped
1 1/2 cups water

Recipe Directions for Well-fried beans

  1. Soak beans overnight, boil in soaking liquid until meltingly soft, about 1 hour. Drain, reserving cooking liquid.

  2. Fry onion and peppers in oil untiul softm, add salt and cumin and fry until fragrant, just a minute or two.

  3. Add half the beans and start mashing them into a smooth purée, adding cooking liquid to keep it smooth (that's the cup of water in the recipem, by the way).

  4. Add more benas and keep mashing and cooking until desired consistency is reached - the longer you cook, the beanier it gets!

  5. Serve sprinkled with the cilantro
