Recipe Ingredients for WeightWatchers Shrimp Pad Thai

12 oz Japanese Somen Noodles
1.5 cup Soup, chicken broth, canned, less/reduced sodium
1 large Egg, Whole
2 tbsp Sauce Soy 30% Less Salt Than Our Regular Soy Sauce
2 tbsp Peanut Butter Low Fat Smooth
1 tsp Sauce, Ready-to-serve, Pepper, Tabasco
2 tsp Pure Sesame Oil
8 oz Shrimp Cooked
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
0.5 oz Ginger Root
1 tsp Garlic Cloves
0.25 tsp Salt, Table
0.25 tsp Pepper, Black
4 tbsp chopped Onions, Spring Or Scallions
0.5 oz Peanuts, All Types

Recipe Directions for WeightWatchers Shrimp Pad Thai

  1. Cook noodles according to package directions without added salt or fat. Drain, transfer to a large bowl and cover with foil to keep warm.

  2. Meanwhile, in medium bowl, whisk together broth, egg, soy sauce, peanut butter and hot sauce. Set aside until ready to use.

  3. Heat oil in a large non-stick skillet over medium heat. Add shrimp, red pepper, ginger and garlic and sauté until shrimp just begin to turn pink, about three minutes.

  4. Season shrimp mixture with salt and black pepper. Add chicken broth mixture and bring to a simmer.

  5. Cook until shrimp are bright pink and cooked through (mixture will be lumpy from the cooked egg), stirring constantly with a wooden spoon, about 2 to 3 minutes.

  6. Stir shrimp mixture into noodles and mix well.

  7. Transfer to individual plates and top each serving with scallions and peanuts.
