I love this soup especially when I undercook the vegetables so there is some crunch. Also, I use chicken broth instead of the vegetable broth mostly because I usually have it on hand.

Recipe Ingredients for Weight Watchers Zero Point Soup

2/3 cup sliced carrot
1/2 cup diced onion
2 garlic cloves
3 cups vegetable broth
1 1/2 cups diced green cabbage
1/2 cup green beans
1 tbsp. tomato paste
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/4 tsp. salt
1/2 cup zucchini

Recipe Directions for Weight Watchers Zero Point Soup

  1. In a large saucepan, sprayed with nonstick cooking spray, sauté the carrot, onion, and garlic over low heat until softened, about 5 minutes.

  2. Add broth, cabbage, beans, tomato paste, basil, oregano, and salt and bring to a boil.

  3. Lower heat and simmer covered about 15 minutes or until beans are tender.

  4. Stir in zucchini and heat 3-4 minutes. Serves hot. Serves 4 at about 1 cup each
