Recipe Ingredients for Weight Watchers Whoopie Pies

1 cup all purpose flour
1/4 cup unsweetened cocoa powder
1 tsp baking soda
1/4 tsp salt
1/2 cup Splenda no calorie sweetener
2 oz vegetable shortening 1/4 cup
1 egg white
1/2 cup fat free milk
6 oz marshmallow creme

Recipe Directions for Weight Watchers Whoopie Pies

  1. Preheat oven to 425 Degrees. Combine flour, cocoa, baking soda and salt in a small bowl. With a mixer on medium mix shortening, sugar and egg whites in a medium bowl for 2 minutes until fluffy. Stir in the flour mixture and then the milk and stir until just blended.

  2. Drop the dough by spoonfuls onto large ungreased cookie sheet, making 36 cookies. Bake 5-7 minutes or until top springs back when lightly touched.

  3. Cool completely and then put 2 tsp marshmallow creme on 1/2 of the cookies and then top with the other cookie. Store in airtight container.
