This was in one of the weekly meeting pamphlets. Can be a little bland but can be perked up with a number of spice additions or additional vegetables.

Recipe Ingredients for Weight Watchers Vegetable Soup

32 oz vegetable stock
10 oz baby spinach
1 carrot, diced
1 celery stalk, diced
1 tsp garlic, minced
14 1/2 oz diced tomatoes
1 onion, chopped
1 tablespoon basil
1 tsp oregano
1 can tomato paste
1/2 tsp crushed red pepper

Recipe Directions for Weight Watchers Vegetable Soup

Combine all ingredients in a crock pot and let cook for 4-6 hours on low.
