Weight Watchers Favorite Vegetable Soup

Recipe Ingredients for Weight Watchers Vegetable Soup (Favorite)

2 stalks Celery, chopped
1/4 cup Diced Onion
2 tsp chicken boullion
1/2 cup carrots
1/2 cup tomatoes
1 cup zucchini
1 tsp parsley
1/4 tsp basil
1 dash pepper
2 cups water

Recipe Directions for Weight Watchers Vegetable Soup (Favorite)

  1. Combine Celery, onion, boullion in sauce pan, cook stirring occasionally until onion is transparent.

  2. Add carrots, tomatoes, zucchini, parsley, basil and pepper. Stir well. Cover and cook 10 minutes over low heat, stirring occasionally.

  3. Add water and bring to a boil. Reduce heat. cover and cook 20 minutes or until vegetables are tender.

  4. When veggies are done to your liking, using slotted spoon remove 1/2 veggies and purre them. Return to soup ( I used stick blender instead).
