C.L. and her husband, Larry Loebig, have put their heads together to come up with this hearty, spicy crowd pleaser that's a cinch to throw together. ps, this is by far the easiest recipe we've tried. If I were to do it again, I'd add some cilantro for an extra kick. PPS The calorie count in the recipe book is 241 calories per serving. I don't know how this site got to 310, but I imagine it is somewhere between these two numbers.

Recipe Ingredients for Weight Watcher's Southwest Easy-Oven Chicken

16 oz Boneless Skinless Chicken Breasts
1 cup Natural Goodness Chicken Broth
15 oz Black Beans
15 oz Dark Red Kidney Beans
12 tbsp Mild Salsa
2 clove Garlic

Recipe Directions for Weight Watcher's Southwest Easy-Oven Chicken

  1. Preheat the oven to 350

  2. In a 13 by 9 inch baking pan, combine the broth, the beans, salsa, and garlic. Add the chicken and baste with some of the liquid.

  3. Bake, stirring once, until the chicken is cooked through and the liquid is reduced, about 45 minutes.

  4. Can't decided whether the recipe calls for covering the chicken or letting the liquids evaporate.
