I adjusted WW recipe by adding canned tomatoes and I use the kind with green chiles to give it some kick.

Recipe Ingredients for Weight Watchers soup

1 tbs olive oil
3 carrots
1/2 cup chopped onion
2 garlic cloves
4 cups chicken broth
2 tbs tomato paste
2 cups canned tomatoes
2 cups cabbage
1 cup frozen green beans
1 zucchini
1/4 tsp basil
1/2 tsp oregano
1/2 tsp salt

Recipe Directions for Weight Watchers soup

  1. Place 1 Tablespoon oil in dutch oven or large pot.

  2. Chop onion, garlic & carrots, add to pot and saute for about 3 minutes.

  3. Add chicken broth, tomatoes, green beans tomato paste, and seasonings. Cut cabbage into bite size pieces and add to pot.

  4. Cook covered over low to medium heatv for about 30 minutes.

  5. Add zucchini and cook for another 10 minutes or so.

  6. Enjoy!
