Recipe Ingredients for Weight Watchers Minestrone

2/3 cup carrots, sliced
1/2 cup onions,diced
2 garlic cloves, minced
3 cups fat-free chicken broth
1 1/2 cups green cabbage, diced
1 cup green beans, cut-up
1 tablespoon tomato paste
1/2 teaspoon basil, dried
1/4 teaspoon oregano, dried
1/4 teaspoon salt
1 1/2 cups cannelini beans

Recipe Directions for Weight Watchers Minestrone

  1. Saute carrots, onions and garlic in saucepan sprayed with cooking spray for about 5 minutes over med-low heat. Add everything else and simmer for 15 minutes, or until green beans are tender.

  2. You can add a parmesan cheese rind while simmering for added flavor. (increases sodium somewhat). Freezes well.
