Recipe Ingredients for (Weight Watchers) Chicken, Sausage, and Capers

2 1tsp Olive Oil
0.4 breast, bone and skin removed Chicken, Breast, Meat Only
5 serving (Johnsonville) Hot Italian Sausage (Links)
2 medium raw Bell Pepper Green
1 medium (2-1/2" dia) Onions
2 tsp Vinegar red wine
1/4 tsp Oregano
1.5 cup Crushed Tomatoes
0.5 serving Chicken Broth
2 tbsp, drained Capers, Canned
2 tbsp Parmesan, Grated Cheese
2 cloves, raw Garlic

Recipe Directions for (Weight Watchers) Chicken, Sausage, and Capers

  1. In a large nonstick skillet over medium heat, saute the chicken until golden and cooked through, 6-8 minutes. Transfer to a bowl with a slotted spoon.

  2. In the skillet, cook the sausage, stirring frequently, until cooked through and brown, 8-10 minutes Pour in the vinegar: cook until the liquid evaporates, 1-2 minutes. Add the bell peppers, onion, garlic, and oregano; cook, stirring, until the peppers are tender, 4-5 minutes.

  3. Stir in the tomatos, broth, and capers; bring to a boil. Return the chicken to the skillet and sprinkle in the cheese. Reduce the heat and simmer until the sauce thickens slightly.
