Recipe Ingredients for Weight Watchers Chicken Fried Rice

1 tbsp olive oil
4 egg whites
2 tbsp onion
1/2 cup peas
1/2 cup carrot
3/4 lb chicken
2 cup instant brown rice
3 tbsp soy sauce

Recipe Directions for Weight Watchers Chicken Fried Rice

Put a little oil in a pan and scramble the egg whites (stirring constantly 3-5 minutes) Remove and set aside. Offheat re-oil the pan and saute the onions for a couple minutes. Add chicken (cut into small pieces) and carrots. Saute until chicken is golden brown and cooked through (about 5 minutes). Stir in cooked egg white, cooked brown rice, peas and soy sauce - cook all together until heated through (1 minute). Yields six 1 cup servings.
