"Seven years ago, Julie, and aspiring opera singer, lost an audition because the director thought she was too heavy for the part. The next day, she joined Weight Watchers. To her surprise, instead of cottage cheese and baked fish, Julie found a whole new world of 'real food,' out of which evolved this prizewinning recipe. The slow cooking keeps the vegetables firm and the chicken unbelievably moist. Make it for a Sunday supper, and pack any leftovers for lunch the next day.

Recipe Ingredients for Weight Watcher's Bella Braised Chicken

1 tbsp Willow Run Soybean Margarine
2 medium (2-1/2" dia) Onions
2 stalk, medium (7-1/2" - 8" long) Celery
1 medium Carrots
5 clove Garlic
1.5 oz All-Purpose Flour
1.5 tsp Pepper, Black
24 oz Fresh Boneless Skinless Chicken Breasts
1 tbsp Extra Virgin Olive Oil
14.5 oz Diced Tomatoes, No Salt Added
1 container Chicken Broth
8 oz Chicken Broth
4 fl oz Wine, Table, White
2 tbsp Parsley
1 tsp, leaves Thyme, Dried

Recipe Directions for Weight Watcher's Bella Braised Chicken

  1. dice carrot

  2. chop onions

  3. dice celery

  4. mince garlic

  5. Preheat oven to 325 d. F

  6. in a large, nonstick skilet, melt the margarine. Add the onions, celery, carrot, and garlic; cook, stirring as needed, until softened, about 5 minutes. Transfer the vegetables to a 3-quart Dutch oven or casserole.

  7. In a gallon-size sealable plastic bag, combine the flour and pepper. Add the chicken; shake to coat.

  8. In the same skillet, heat the oil. Add the chicken and brown 2 minutes on each side. Arrange the chicken on top of the vegetables. Return the skillet to the heat; add the tomatoes, broth, wine, parsley, and thyme. Cook, scraping up the browned bits from the bottom of the skillet, until the liquid comes to a boil; pour over the chicken. Bake, covered, until the chicken is cooked through and the vegetables are tender, about 1 hour. Serve, sprinkled with additional minced parsley.
