This medium spice curry thickens up beautifully while cooking. Don't be put off by the length of cooking time, you can walk away and let it cook on its own. Goes great with brown rice.

Recipe Ingredients for Weight Watchers Beef Rhogan Josh

10 spray pam cooking spray
8 oz lean sirloin, cubed
1 onion, sliced
1 green pepper, sliced
5 slices ginger root
1 tsp cayenne pepper
2 tsp ground cumin
2 tsp turmeric
2 tsp ground coriander
3 tbsp fat free plain yogurt
400 g canned tomatoes

Recipe Directions for Weight Watchers Beef Rhogan Josh

  1. Lightly coat a large lidded pan with the low fat cooking spray and heat until hot. Add the meat and cook for 3-4 minutes until browned all over. Remove from the pan and set aside.

  2. spray the pan again, add the onion and pepper and stir fry for 5 minutes until beginning to brown.

  3. Add the ginger, garlic, and spices. Cook for a further minute before adding the yogurt and the tomatoes and finally, the meat.

  4. Stir in 300 ml water, bring to a boil, cover and reduce the heat. Leave to simmer for 1 hour until the meat is tender.
