Recipe Ingredients for Weight Watchers Barley with Butternut Squash, Apples and Onions

1/2 cup Barley
1 tbsp Olive Oil
2 cup, cubes Squash, Winter, Butternut
1 cup, chopped Onions
1/2 cup, chopped Peppers, Sweet, Red
1 Apple Apples
0.33 cup Fat Free Chicken Broth
1 1/2 tsp Garlic
3/4 teaspoon Thyme
1/4 tsp Pepper, Black
3/4 tsp Sea Salt

Recipe Directions for Weight Watchers Barley with Butternut Squash, Apples and Onions

  1. Boil 3 cups water and 1/2 tsp salt

  2. Add barley, cover and simmer 30 - 35 min

  3. Cook squash over medium-high heat till softened, stirring often - about five minutes, add onion and red pepper cook additional three minutes

  4. Stir in apple (cubed), garlic, thyme, black pepper and remaining 1/4 tsp salt. cook, stirring until apple is almost tender, about two minutes; stir in broth, scraping botttom of skillet with spoon; stir in barley; toss over low heat.
