Recipe given to me by a coworker from a weight watchers cookbook. O points.

Recipe Ingredients for Weight Watcher Garden Vegetable Soup

2/3 c. sliced carrots
1/2 diced onion
2 minced garlic cloves
3 c. vegetable broth
1 1/2 c. diced green cabbage
1/2 c. green beans
1 T. tomatoe paste
1/2 t. dried basil
1/4 t. dried oregano
1/4 c. zucchini, chopped

Recipe Directions for Weight Watcher Garden Vegetable Soup

  1. Spray a large saucepan with nonstick cooking spray, heat.

  2. Saute the carrots, onions, and garlic over low heat until softened, about 5 minutes.

  3. Add broth, cabbage, beans, tomato paste, basil, oregano, and salt; bring to a boil.

  4. Reduce heat; simmer, covered about 15 minutes or until beans are tender.

  5. Stir in the zucchini and heat for 3-4 minutes.

  6. Serve hot.
