Recipe Ingredients for Wegman's Red Lentil Chili

1 c. red lentils, rinsed thoroughly
2 c. water
1 tbs. olive oil
1/2 c. onions, minced
1/2 c. green pepper, minced (divided)
2 cloves garlic, minced
1 c. roma tomatoes, diced
2 c. vegetable broth
1/8 tsp. cayenne
1/4 tsp. cumin
1/4 tsp. turmeric
1/2 tsp. chili powder
1 tbs. tabasco sauce
1 tsp. kosher salt
1/4 tsp. fresh ground pepper

Recipe Directions for Wegman's Red Lentil Chili

  1. In a small saucepan, bring red lentils to boil in water. Turn off. Using immersion blender, puree about 1/2 of lentil mixture and set it aside.

  2. In a larger soup pot, heat 1 Tbs. olive oil. Add onions, garlic and 1/4 c. of the green pepper. Cook over medium heat for 5-7 minutes until soft but not browned.

  3. Add tomatoes and cook 5 more minutes.

  4. Add the vegetable broth and remaining ingredients (spices). Bring to a low boil and simmer for 10 minutes.

  5. Add the red lentils and continue to simmer for 15 minutes more.

  6. Remove from heat and stir in the remaining 1/4 c. of minced green peppers.

  7. Makes 7 (1 c.) servings.
