Of course this recipe doesn't have to be limited to the weekend, but it's great for when I have a craving for one of those greasy diner breakfasts with bacon, eggs & hash browns - this make-at-home substitute most definitely is lower in calories, carbohydrates and fat than what you'd get in the diner, and no need to get out of your pyjamas!

Recipe Ingredients for Weekend Breakfast Scramble

1/2 cup egg whites
12 g bacon
1/3 cup Shelled
1/3 cup frozen corn
2 tbsp salsa
1/3 cup black beans
1/4 cup Cheese Mozzarella Shredded Part Skim

Recipe Directions for Weekend Breakfast Scramble

  1. Cook the bacon and blot with paper towels, then chop into small pieces and set aside.

  2. Scramble the egg whites, mixing constantly - add salt & pepper to taste.

  3. Add frozen vegetables and black beans, and continue scrambling until the vegetables are warm.

  4. Add the chopped bacon, salsa, and shredded cheese and stir until the cheese has melted.
