Recipe Ingredients for Wedding Soup

1 lb ground turkey
1 large egg, slightly beaten
4 cloves garlic, crushed with press
4 oz freshly grated romano cheese
6 c chicken broth
2 c water
1 c shredded carrots
8 oz pastina or other tiny pasta
16 oz spinach, coarsely chopped

Recipe Directions for Wedding Soup

  1. Preheat oven to 450 degrees F. Line 15 1/2inch by 10 1/2 inch jelly roll pan with baking parchment.

  2. In a large bowl, stir ground turkey, egg, garlic, and romano until blended but not overmixed. Spoon mixture onto the center of the prepared pan; with back of spoon, pat into 7x7 square bake mixture 10-15 min or until no longer pink.

  3. Meanwhile, in a 5-6quart pot, combine broth, water and carrots; heat to boil over high heat. Stir in pastina; heat to boiling. Reduce heat to medium; cover and cook 5min.

  4. Stir in spinach; cook 4min. While spinach cooks, cut chicken mixture into bite size square meatballs.

  5. Add meatballs to soup; heat through. Serve soup with romano on top..
