This recipe is from Janet & Greta Podleski's The LooneySpoons Collection, p208. The recipe originally calls for 4 cups cooked brown rice or quinoa; we used 1 cup uncooked quinoa. It also calls for light peanut butter but we didn't have any so we used regular. The amount of beef used is supposed to be 1 lb raw lean sirloin steak. "Beef and vegetable stir-fry with red bell peppers and sugar snap peas. This beef stir-fry becomes a cherished memory pretty quickly. From wok to plate and poof--it's gone in an instant!"

Recipe Ingredients for The Way We Stir (The LooneySpoons Collection)

2 1tsp Oil, Peanut
1 piece, cooked, excluding refuse Beef, Top Sirloin
1 cup, chopped Peppers, Sweet, Red
2 cup, whole Peas, Edible-podded (sugar snap peas)
1 cup, chopped Onions, Spring Or Scallions
2 serving Soy Sauce
2 tblsp Smooth Peanut Butter
3 tsp Ginger Root
0.06 cup Cornstarch
1 1tsp Oil, Sesame
1/2 tsp Spices Crushed Red Peppers
1 cup Quinoa
1 cup Beef Broth

Recipe Directions for The Way We Stir (The LooneySpoons Collection)

  1. Heat peanut oil in a large wok over medium-high heat. Add beef (cut into thin strips about 1/4 inch thick) and cook until no longer pink, about 4 minutes. Remove beef from wok and set aside.

  2. Add red pepper (thinly sliced), peas and green onions (coarsely chopped) to wok. Cook and stir until vegetables are tender-crisp, about 3 to 4 minutes.

  3. Whisk together broth, soy sauce, peanut butter, grated gingerroot, cornstarch, sesame oil and red pepper flakes. Add to vegetables, along with beef. Cook and stir until sauce is bubbly and has thickened, about 2 minutes.

  4. Serve beef and vegetables over hot rice or quinoa.
