My low-cal way to do eggplant parmesan.

Recipe Ingredients for The way I do Eggplant Parm

1 small Eggplant, peeled & sliced
2 cups Pasta Sauce
1 Mozzarella, Part Skim Milk Cheese (oz)

Recipe Directions for The way I do Eggplant Parm

  1. Peel and slice medium sized eggplant. Put on greased baking sheet and cook 20 minutes on 425.

  2. Lightly oil top side of eggplant slices, flip.

  3. Put small spoonful of sauce on each slice, sprinkle with cheese.

  4. Bake for 15 minutes more, or until cheese is melty and slighty brown.
