A curiously delightful summer salsa

Recipe Ingredients for Watermelon Salsa

1 cup green pepper
1 cup red pepper
2 jalapeno peppers
2 cups watermelon
1 red onion
2 tbsp fresh basil
2 tbsp fresh mint
4 tbsp rice vinegar
1 tbls canola oil
3 carrots
1/2 cup cilantro

Recipe Directions for Watermelon Salsa

  1. dice green pepper, red pepper, jalapano peppers, red onion and watermelon. Put into bowl.

  2. slice carrots and add to mixture

  3. chop basil, mint and cilantro, add to mixture

  4. Add rice vinager and canola oil. Mix

  5. Refrigerate for 1/2 hour

  6. Serve with blue corn tortilla chips
