Recipe Ingredients for watermelon salad

7 cups Fresh Cubed Seedless Watermelon
1 cup crumbled feta
1/2 medium red onion, thinly sliced
1/3 cup pine nuts, toasted
1/2 cup arugula, packed
1/3 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
1/4 cup olive oil
2 T fresh lemon juice
1/2 t salt
1/2 t freshly ground black pepper

Recipe Directions for watermelon salad

  1. Combine first 7 ingredients in large bowl.

  2. Wisk together last 4 ingredients and pour over salad, toss well to combine.
