A delicious summer salad with surprisingly complimentary flavours. Let the watermelon and onions marinade for ten to fifteen minutes before serving.

Recipe Ingredients for Watermelon Salad

2 cups watermelon
3 tbsp mint
1/2 cup sliced red onion
1/3 cup feta cheese
4 tbsp extra virgin olive oil
2 tbsp red wine vinegar

Recipe Directions for Watermelon Salad

  1. Cube the watermelon (yellow watermelons are excellent in this dish)

  2. crumble feta cheese

  3. slice onion & mint

  4. mix the above ingredients in a large bowl

  5. mix olive oil & red wine vinegar with salt & pepper; pour onto watermelon, onions & mint

  6. Leave the mixture to meld in the fridge for 10 to 15 minutes
