Really refreshing and simple salad

Recipe Ingredients for Watermelon and Feta salad

1/4 Watermelon
1/2 cucumber
60 grams feta cheese
2 tbsp balsamic vinegar
2 tablespoons extra virgin olive oil
1 few sprigs of mint
1 salt and pepper to taste

Recipe Directions for Watermelon and Feta salad

  1. Cube watermelon, cucumber, and feta.

  2. In a large bowl, add olive oil and vinegar. Mix with fingers or a whisk.

  3. Add cubed watermelon, cucumber, and feta and toast to coat.

  4. Roughly chop mint and add to salad.

  5. Taste and adjust seasoning as needed.
