Recipe Ingredients for Watermelon and Feta Salad with Grilled Shrimp

3 tbsp orange juice
4 tbsp lime juice
1/8 tsp salt
1 freshly ground pepper
3 lbs seedless watermelon
2 tbsp fresh mint leaves, lightly packed
1 lb large shrimp, peeled and deveined
1 tbsp olive oil
1/2 cup feta cheese, crumbled

Recipe Directions for Watermelon and Feta Salad with Grilled Shrimp

  1. In a large bowl, combine orange juice, 2 tbsp lime juice and 1/8 tsp salt.

  2. Cut watermelon into quarters and remove rind. Cut fruit into 1-inch pieces and add to juice mixture. Cut mint leaves lengthwise into thin strips. Add to bowl and stir gently to mix well. Cover and chill for 1-4 hours.

  3. Sprinkle shrimp lightly with salt and pepper. Put in a bowl and add olive oil and remaining 2 tbsp lime juice. Chill for 30 minutes.

  4. Heat a grill to high, and oil rack. Drain shrimp and thread onto flat metal skewers. Grill shrimp, turning once, until bright pink and opaque, 4-5 minutes total.

  5. Gently stir feta into watermelon mixture. Spoon onto plates and push grilled shrimp off skewers onto salad. Serve at once.
