6 ounces watercress
2 peaches, pitted and chopped
2 tablespoons fresh lemon juice
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 tablespoon extra-virgin olive oil
1/4 cup pistachios, shelled

Recipe Directions for Watercress and Peaches

  1. In large bowl, combine watercress, peaches, lemon juice, salt, and freshly ground black pepper.

  2. Toss gently until coated. Drizzle with extra virgin olive oil; gently toss again. Top with pistachios.
