Recipe Ingredients for Watercress, mango and grape salad

1 T olive oil
1 T white wine vinegar
1 tsp dijon mustard
1 tsp honey
1 mango
1 grapefruit
1/2 pound seedless grapes
1/4 pound watercress
1/3 cup pine nuts
1/8 tsp black pepper

Recipe Directions for Watercress, mango and grape salad

  1. Make the dressing. Mix the olive oil, vinegar, mustard, honey, and pepper.

  2. Skin the mango and cut the flesh into slices. Remove the peel and pith from the grapefruit and slice the flesh between the membranes into segments.

  3. Squeeze the juice out of the grapefruit membrane and whisk 1 T of it into the dressing. Put the watercress into a bowl with the mango and grapefruit.

  4. Lightly toast the pine nuts in a dry fry pan, shaking them frequently. Scatter them over the salad then drizzle with the dressing and serve.
