Recipe Ingredients for Warm Turkey Sausage & Potato Salad

1 lb potatos
4 cups arugula
12 oz cooked turkey sausage
1/3 cup cider vinegar
1 tbs maple syrup
1 tbs Dijon mustard
1 tbs olive oil

Recipe Directions for Warm Turkey Sausage & Potato Salad

  1. Boil the potatos until fork tender. Cut potatos into cubes and add arugula and cover with foil to keep warm.

  2. Cook sausage until brown and add to potatoes and arugula mix.

  3. Remove pan from heat and whisl in vinegar, maple syrup, and mustard, scrapping any browned bits. Gradually whick in oil. Pour dressing over salad and toss until arugula is wilted. Season with salt and pepper to taste.
