Recipe Ingredients for Warm Sage-Potato Salad

1 3/4 pound new potatoes
2 tablespoons Champagne Vinegar
1/4 teaspoon salt
1/2 teaspoon black pepper
2 1/2 tablespoons fresh chives
1 teaspoon sage

Recipe Directions for Warm Sage-Potato Salad

  1. Place the potatos in a sauce pan with enough water to cover them, and then bring the water to a boil. Simmer until the potatos are tender when pierced with a knife, about 20 minutes.

  2. Cut the potoatos in half (or quarters if potatos are large) and place them in a bowl. Drizzle the potatoes with the vinegar and toss; add the salt and pepper. Sprinkle the chives and age over the potatoes and gently toss until the seasonings are blended.
