Recipe Ingredients for Warm roasted butternut squash & lentil salad

500 grams Squash, Winter, Butternut
1 tbsp Olive Oil
2 cloves, raw Garlic
1 tsp Thyme, Fresh
2 Teaspoon Vinegar
5 g Mustard
1 cup Lentils, Mature Seeds
1 cup Spinach
75 grams Tomatoes
20 grams Light Cheese

Recipe Directions for Warm roasted butternut squash & lentil salad

  1. Roast chunks of butternut squash with 2tsp olive oil, crushed garlic & thyme at 200 degrees for about 25 mins until soft and browned at edges.

  2. Meanwhile, mix balsamic vinegar, 1tsp oil, mustard & 1tbsp water, and stir into lentils. Add finely sliced red onion & chopped tomato., and finally raw baby spinach leaves.

  3. Arrange on plates. Top with roasted squash and crumble on feta. Add toasted pumpkin seds if desired.
