Warm Quinoa Salad with Shiitakes, Fennel and Cashews

Recipe Ingredients for Warm Quinoa Salad with Shiitakes, Fennel and Cashews

2 cups quinoa
1 cup chicken broth
1/4 cup peanut oil
5 garlic cloves
1/2 cup green onions
2 cups fennel
2 cups shiitake mushrooms
2 tablespoon soy sauce
1 tablespoon rice wine vinegar
1 cup cashews
4 tablespoon parsley
4 tablespoon cilantro
1/2 cup lime juice

Recipe Directions for Warm Quinoa Salad with Shiitakes, Fennel and Cashews

  1. Bring 3 cups of water, 1 cup of chicken broth and quinoa to a boil in medium saucepan. Turn heat down to simmer for 10-15 mins.

  2. Meanwhile, in a wok, heat peanut oil. Add minced garlic and green onion to oil. Cook for 30 seconds or until golden brown.

  3. Add fennel and cook for 2 mins. Add mushrooms and cook for another 5 mins.

  4. Add soy sauce, vinegar, parsley, cilantro and cashews for last 30 secs. and remove from heat.

  5. Add quinoa to wok mixture.

  6. Zest and juice lime and then add it to wok mixture.

  7. Serve in bowls.
