Vegan potato salad with a southwestern flair. No oil. Recipe inspired by a fellow CC member's Potaotes and Small Peas with Pungent Green Sauce!

Recipe Ingredients for Warm Potato Salad with Punchy Dressing

16 oz Yukon Gold Potatoes
1 package (10 oz) yields Peas, Green
1 cup slices Cucumber
1 medium raw Onion Red
2 tbsp Flaxseed
4 cloves Garlic
100 grams Cilantro
112 grams Peppers, Chili, Green, Canned
2 tbsp Vinegar balsamic
0.5 cup (8 fl oz) Water
0.5 tsp Pepper, Black

Recipe Directions for Warm Potato Salad with Punchy Dressing

  1. Cut potatoes into 1/4 or 1/8ths and steam until tender.

  2. Add peas to potatoes when they are near enough done to make both hot and tender at same time.

  3. While potatoes and peas are steaming add all else, except the red onion and cucumber, into a blender and blend to a creamy sauce.

  4. Slice cucumbers to bite size and onions into slices quartered.

  5. Combine all ingredients in large bowl and toss to coat with dressing. Serve warm.
