1 Salt
1 pepper,freshly ground

2 tablespoons water
4 tablespoons unsalted butter
1/4 grams (1) bay leaf
1 tablespoon finely chopped fresh thyme leaves
3 tablespoons balsamic vinegar
110 grams (4 cups loosely packed) baby spinach or Arugula
