Recipe Ingredients for Warm and Nutty Cinnamon Quinoa

1 c. light soymilk
1 c. water
1 c quinoa
2 c. blueberries
1/2 tsp. cinnamon
1/3 c. pecans, chopped, toasted
4 tsp. agave syrup

Recipe Directions for Warm and Nutty Cinnamon Quinoa

Rinse quinoa. Put milk and water into medium saucepan. Add quinoa. Heat to boiling. Reduce heat and cover. Let simmer for 15 or 20 minutes or until most of liquid has boiled away. While quinoa is cooking, toast pecans in the oven for 5 -6 minutes in a 350 degree oven, or in a dry skillet for about 3 minutes. Watch carefully so they will not burn. When quinoa is done, add blueberries, spoon into four bowls, top with pecans, and drizzle with agave nectar.
