Recipe Ingredients for Warm mushroom salad stuffed tomatoes

2 large tomatoes
1 salt and pepper
3 tbsp extra-virgin olive oil
4 stalks celery, chopped
1 pound baby portabello mushroom
2 tbsp balsamic vinegar
2 tsp Dijon mustard
3 tbsp flat-leaf parsley, chopped

Recipe Directions for Warm mushroom salad stuffed tomatoes

  1. Split the tomatoes in half and scoop out the seeds and flesh. Trim the core tops. Season tomato halves with salt and pepper.

  2. Heat the tomato pulp in a medim skiller over medium-high heat. Add celery and mushrooms and cook 7-8 minutes until mushrooms are tender. Season the vegetables with salt and pepper adn add vinegar to the pan. Turn off heat and stir in mustard and parsley to coat. Adjust seasonings.

  3. Divide the warm salad among the 4 tomato halves and serve.
