A warm salad with lots of veggies and whole grain rice

Recipe Ingredients for Warm Green Bean Salad

4 cup Beans, Snap, Green
1 medium raw Onion Red
2 cup Long Grain
1 tbsp Olive Oil
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
4 serving Parmesan 100% Grated

Recipe Directions for Warm Green Bean Salad

  1. cut green beans, red pepper, and onions, preheat oven to 350

  2. Combine all ingredients except tomatoes and half of parmesan

  3. roast in oven for 30 minutes, stirring occasionally

  4. stir in diced tomatoes

  5. top with remaining parmesan cheese and serve warm
