When you hear potato salad, don't think mayo - think warm and savory! Germans have a very different version of potato salad, which is fantastic for potlucks and parties. Enjoy this European treat!

Recipe Ingredients for Warm German Potato Salad

9 Yukon Gold potatoes
6 slices reduced sodium bacon
1 medium onion, chopped
2 tablespoons honey
1/2 teaspoon celery seed
1 teaspoon ground black pepper
1 tbsp dried parsley
1 cup apple cider
12 oz light beer
1/2 cup apple cider vinegar

Recipe Directions for Warm German Potato Salad

  1. Bring a large pot of salted water to a boil.

  2. Add potatoes and cook until tender but still firm, about 30 minutes.

  3. Drain, cool and slice thin, about 1/4 inch thick.

  4. Cut bacon with scissors into 1/2 inch pieces.

  5. Fry bacon in a large, deep skillet. Cook over medium high heat until evenly brown.

  6. Remove bacon from pan and set on paper towels to drain. Leave drippings in the pan.

  7. Saute onions in bacon drippings until they are golden-brown.

  8. In a small bowl, whisk together the honey, salt, celery seed, and pepper.

  9. Add mix to the sauteed onions and cook and stir until bubbly, then remove from heat.

  10. Stir in water and vinegar, then return to the stove and bring to a boil, stirring constantly.

  11. Boil and stir for one minute.

  12. Carefully stir bacon and sliced potatoes into the vinegar/water mixture, stirring gently until potatoes are heated through.
