Recipe Ingredients for Warm Chicken & Spinach salad

1 lb Boneless Skinless Chicken Breast Cutlets Raised Without Antibiotics
1 tbs extra virgin olive oil
1/2 tbs unsalted butter
1/2 cup shallots, raw, chopped
3 cloves garlic, minced
3 tbs capers, rinsed
1/2 cup low sodium chicken broth 99% fat free
1 fruit+2-1/8"+dia lemon
2 lbs fresh baby spinach
1/2 cup Parmesan Cheese reduced fat

Recipe Directions for Warm Chicken & Spinach salad

  1. Preheat broiler

  2. Place chicken on broiler pan and spray lightly with extra virgin olive oil cooking spray (this does not add to calories or fat as long as you spray lightly!)

  3. Broil chicken until browned on both sides and cooked through-keep warm

  4. Put oil & butter in large skillet over medium high heat until butter is melted

  5. Add shallots, garlic and capers-saute for 5 mins

  6. Add chicken broth and reduce for a minute

  7. add lemon juice and immediately add spinach in handfuls until you get it all in (keep turning spinach in pan, coating with sauce and wilting until you get it all in there) leave some of the leaves crisp and turn off heat

  8. Immediately add lemon zest and mix in

  9. Chop chicken into bite-sized pieces, add to spinach

  10. Place onto 4 plates and add cheese
