Recipe Ingredients for Warm Chick Pea Salad

2 tsp Olive Oil
1 cup, chopped Carrots
1/2 medium (2-1/2" dia) Onions
2 clove Garlic
1 tsp Paprika
1/2 teaspoon Cumin, Ground
1/4 tsp Spices Crushed Red Peppers
2 1/2 cup Organic Free Range Chicken Low Sodium Broth
1 cup (8 fl oz) Water
2 can Chick Peas
4 cup Spinach
1/4 tsp Salt, Table

Recipe Directions for Warm Chick Pea Salad

  1. Add the carrot and onion to the pan with oil. Cook for 4 minutes, stirring occasionally.

  2. Add the garlic, and cook for1 minute.

  3. Add paprika, salt, cumin, and red pepper. Cook for 30 seconds, stirring constantly.

  4. Stir in the chicken broth, water, and beans.

  5. Bring to a boil. Reduce heat, an simmer for 20 minutes (stir occasionally).

  6. Add the spinach. Cover and simmer for 10 mins, or until the spinach has tenderized. Stir occasionally. This looks like a lot of spinach, but it will shrink up considerably.

  7. Give everything a final stir, and serve!
